Guinness Beef Stew

Ingredients

  • 1 1/2 lb of beef chuck, cut into 1 1/2 inch pieces
  • 1/2 cup of flour
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of vegetable oil
  • 2 teaspoon of minced garlic
  • 3 cups of beef stock
  • 1 bottle/can of Guinness
  • 1/2 can of tomato paste
  • 2 tablespoons of brown sugar
  • 1/4 teaspoon of dried thyme
  • 1 tablespoon of Worcestershire sauce
  • 2 pound of small red potatoes, quartered
  • 1 onion, chopped
  • 1 pound of carrots, chopped
  • 1 bay leaf

Instructions

  1. Preheat oven to 350F,
  2. Mix together flour, salt, and pepper,
  3. Dredge meat in small batches and brown in oil,
  4. Remove browned beef and set aside,
  5. Add onion to the dutch oven and cook until golden brown,
  6. Add Guinness and garlic, scrape browned bits from the bottom of the pot,
  7. Add back browned beef and remainder of dredging flour and bring to a simmer. Then, add in the beef stock, tomato paste, brown sugar, thyme and Worcestershire sauce,
  8. Place in oven for 2 hours or until meat is fork tender,
  9. Add in carrots and return to oven for 1 hour,
  10. Add in potatoes and return to oven for 1 hour,
  11. Serve with crusty bread and a pint of Guinness.
